Cucumber: Yoghurt Lemon Herbs

This recipe is very flexible. Make it as lemony and yoghurty and salty and spicy as you want.

INGREDIENTS

Diced or thinly sliced Persian cucumber
Salt and black pepper
Ground cayenne or Aleppo pepper flakes (optional)
Plain whole-milk yogurt
Red onion, thinly sliced
Garlic clove, crushed
Lemon zest
Lemon juice
Dill, chopped fresh
Mint, chopped fresh
Olive oil

PREPARATION

1. In a serving bowl, toss cucumber pieces and onion with some lemon zest, salt and pepper (also add cayenne or Aleppo if using).

2. Add yogurt, garlic and lemon juice. Mix well, taste and add more salt as needed.

3. Mix in dill and mint, then refrigerate until ready to use.

TO SERVE: Drizzle with olive oil.
